Tofu Marinara

1 container of extra firm Tofu
1 cup oatmeal
1 egg
Basil
½ Onion
Asparagus
Olive oil
Cracked pepper

Cut tofu into cubes and pour into bowl of 1 beat egg. In separate bowl (1 cup of oatmeal), mix and coat tofu cubes. Season with 1 TBL of basil. Place cubes onto a greased (olive oil) cookie sheet lined with tin foil. Bake at 450 degrees for approximately 15-20 minutes.

In sauce pan set at med high, cut onion up and Sautee in pan with 1 TBL of Virgin Olive oil. Cut up asparagus and Sautee with onions. Allow onions to brown before pouring in desired marinara of choice. Turn burner down to low. Pour sauce over tofu.
